
GF + vegan + refined sugar free OOEY GOOEY CHOCOLATE CHIP COOKIES

Honestly might be some of the best you’ve ever had... and I’m a serious cookie critic.

Fresh out of the oven featuring a little hungry helper ❤️
Here’s what you’ll need:
Dry ingredients:
1 cup gluten-free oat flour (just blend oats in a food processor or high-speed blender to get a fine consistency)
1/3 cup almond flour (can sub almond meal by blending almonds into a fine powder in a food processor or high-speed blender)
2/3 cup coconut sugar (can sub for crystallized monk fruit sweetener or stevia if sugar free)
1 tbsp arrowroot starch (can sub tapioca flour)
1/2 tsp baking powder
1/4 tsp pink sea salt
Wet ingredients:
4 flax eggs (4 tbsp flax meal + 5-6 tbsp water)
1/4 cup raw coconut oil
1-2 tbsp dairy free milk
Fold-ins:
dairy free chocolate chips
walnuts (optional)
What you’ll do:
Before doing anything, preheat your oven to 375 F.
Sift dry ingredients together in a large bowl until well combined.
After flax egg has reached thick consistency, mix into dry ingredients.
Mix in coconut oil until you reach a doughy consistency with all of the ingredients saturated. Then add as much milk as you need to reach desired consistency. I did 1 tbsp, but you might need more 🤷🏻♀️
Fold in chocolate chips. Scoop and form into little 2 inch balls. You can add more chocolate chips on top if you’d like!
Bake for 8-12 minutes and voila!!
